This Recipe makes 2 loaves of delicious Lemon-Raspberry Bread! This was all I had left to photograph lol. The rest of the loaves were quickly enjoyed by family & friends! I guess that is the best recommendation I can give!💛

The Best Lemon-Raspberry Bread

The Best Lemon-Raspberry Bread

This bread has the perfect lemon & raspberry flavor!

Ingredients

  • 1 cup softened unsalted butter
  • 2 cups sugar
  • 3 eggs
  • 3 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup buttermilk (I used a 2/3 cup of half & half with a almost a full tablespoon of lemon juice stirred in, let sit for 5 mins.)
  • 1 tablespoon fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 cups fresh raspberries

Instructions

  1. Preheat oven to 325. Grease & flour 2 loaf pans.
  2. In a small bowl sift flour, soda, salt, & whisk together.
  3. In a separate small bowl take 1 cup of flour mixture, gently toss raspberries into it, & set aside.
  4. Using an electric mixer cream butter & sugar well. Add eggs & beat until mixture is smooth. Mix in buttermilk.
  5. Add flour mixture to cream mixture. GENTLY fold in lemon juice, zest, & raspberries.
  6. Pour into prepared pans. Bake for 60 minutes. Test to see if toothpick comes out dry. (They may take longer, mine took about another 15 mins. to bake.)
  7. Place on wire racks to cool. Run a knife along the edge of loaves & remove from pans.
Light Pink Raspberry Glaze
  1. 2 tablespoons melted butter
  2. 2 tablespoons finely chopped fresh raspberries (I used more like a handful)
  3. A dash of vanilla
  4. 1 cup powdered sugar sifted
  5. Melt butter in a microwave safe bowl, add raspberries and vanilla. In a separate bowl sift the powder sugar. Make a well in the middle, adding melted butter, raspberries, and vanilla mixture. Whisk until smooth.
  6. If the glaze is really runny add more powder sugar. It is better for it to be on the thicker side because a 5-10 seconds in the microwave will bring it to glazing perfection.
  7. Spread over loaves.You can glaze them after they have cooled at least 15 minutes, or wait until completely cooled. Any left over glaze keeps very well in the refrigerator. You can also add raspberries & candied lemon slices for garnish. Enjoy your delicious lemon-raspberry loaves!

  3. 1/4 cup fresh lemon juice
  4. 1 tablespoon lemon zest
  5. Melt butter; add lemon juice & zest.
  6. Sift powder sugar. Make a well, adding melted butter, lemon juice, and zest. Whisk until smooth.
  7. Spread over loaves.You can glaze them after they have cooled at least 15 minutes, or wait until completely cooled. Any left over glaze keeps very well in the refrigerator. (We found that we enjoyed the bread so much that we didn’t find the glaze necessary. But, if you love lemon flavor you won’t be able to get enough of the glaze!)
  8. You can also add raspberries & candied lemon slices for garnish. Enjoy your delicious lemon-raspberry loaves!

There are 2 options for glazing if you want more raspberry flavor go with the light pink raspberry glaze/red raspberry sauce combo or if you desire more lemon flavor go with the lemon glaze!

Light Pink Raspberry Glaze

I believe this is what I used to create the light pink raspberry glaze, but I didn’t write it down lol

Whisk the ingredients in a microwave safe bowl.

  • 2 tablespoons melted butter

  • 1 cup powdered sugar

  • 2 tablespoons finely chopped fresh raspberries (I used more like a handful)

  • A dash of vanilla

If the glaze is really runny add more powder sugar. It is better for it to be on the thicker side because a 5-10 seconds in the microwave will bring it to glazing perfection!

If you want to create the design I created it is easier than you may think. How to explained in the drawing below! Glaze loaves with light pink glaze. Make raspberry dessert sauce put on in stripes along the loaves then drag a toothpick longways up and down to make a beautiful design. You can also add raspberries & candied lemon slices for garnish.
